Main Ingredients

  • 1 lb boneless skinless chicken breasts partially frozen for easier slicing
  • 1 sweet yellow onion thinly sliced
  • 1 bell pepper sliced thin (green or red)
  • 8 slices provolone or white American cheese
  • 4 hoagie rolls

Cooking Fats

  • 2 tbsp butter
  • 1 tbsp olive oil

Spice Rub

  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions
 

  • Place the chicken breasts in the freezer for about 25 minutes, then slice them into very thin shavings. Toss the shaved chicken with the spice rub until evenly coated.
  • Heat olive oil in a large skillet over medium heat. Add sliced onions and bell peppers, cooking for 8–10 minutes until soft and caramelized. Remove and set aside.
  • In the same skillet, melt butter over medium-high heat. Spread the chicken in a single layer and let it sear undisturbed for 2 minutes. Then chop and stir until fully cooked, about 3 more minutes.
  • Return the cooked vegetables to the pan and mix with the chicken. Divide the mixture into four portions and top each with two slices of cheese. Lower heat and let the cheese melt completely.
  • Butter the inside of the hoagie rolls and toast them in a skillet until golden and crisp.
  • Fill each roll with a portion of the cheesy chicken mixture. Serve immediately while hot and melty.

Notes

For best results, wrap the assembled sandwich in foil for a few minutes to soften the bread and enhance the texture. A light spread of garlic mayonnaise can help prevent soggy bread. You can substitute chicken thighs for a juicier option or use rotisserie chicken for a quicker version.
