Ingredients
  

Dough

  • 1 cup extra-sharp cheddar cheese, grated Grate from a block for best melting and flavor.
  • 1 cup all-purpose flour Provides structure and lightness.
  • 4 tbsp cold salted butter, cubed Cold butter helps create crisp, layered crackers.
  • 1/4 tsp salt Brings out the cheese flavor.
  • 2 tbsp ice water Keeps the dough cool and tender.

Instructions
 

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Pulse the flour, salt, and cheese in the food processor until combined.
  • Add the cold butter and pulse until you see coarse crumbs.
  • Slowly stream in the ice water until the dough forms a ball.
  • Chill the dough in the refrigerator for 10 minutes.
  • Roll the dough thinly on a floured surface, about 1/8 inch thick.
  • Cut into small squares using a pizza cutter and poke a small hole in each with a skewer or toothpick.
  • Bake for 10–12 minutes, or until the edges turn golden.
  • Cool completely on a wire rack for crispness.

Notes

If your crackers turn out soft after cooling, pop them back into a 300°F (150°C) oven for 2–3 minutes to restore their crunch. For extra flavor, mix in herbs or spices such as rosemary or smoked paprika before baking.
