- 8 oz about 2 cups uncooked elbow macaroni
- 3 –4 fresh jalapeño peppers seeded and diced
- Pepper Bowl
- 2 Tbsp unsalted butter
- 2 Tbsp all-purpose flour
- 2 cups milk whole or 2%
- 2 cups shredded sharp cheddar cheese
- 4 oz cream cheese
- Optional add-ins: pickled jalapeños shredded bacon, crushed Cheetos
Blanch Pasta
Bring a large pot of heavily salted water to a rolling boil. Add macaroni and cook 2 minutes less than package directions, until just al dente; drain and set aside.
Sauté Peppers
In an oven-safe skillet, melt butter over medium-high heat. Add diced jalapeños (and bacon if using) and sauté until edges brown and peppers soften, about 3–4 minutes.
Make Roux & Cheese Sauce
Sprinkle flour into melted butter and whisk 1 minute. Gradually pour in milk, whisking constantly until smooth. Simmer until sauce thickens, about 5 minutes. Stir in cheddar and cream cheese until fully melted and silky.
Bake & Broil
Stir drained pasta into the sauce. Top with breadcrumbs or crushed Cheetos. Bake at 350 °F for 15–20 minutes, until bubbly. Switch to broil for 1–2 minutes to achieve a golden-brown crust—watch closely to avoid burning.
