Ingredients
  

For the Crust

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 6 tablespoons unsalted butter melted

For the Cheesecake Filling

  • 24 ounces cream cheese softened
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs room temperature
  • 1 cup sour cream
  • 1/2 teaspoon ground cinnamon optional

For the Apple Layer

  • 3 medium apples peeled, cored, and sliced
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon lemon juice

For the Crumble Topping

  • 3/4 cup all purpose flour
  • 1/2 cup old fashioned oats
  • 1/3 cup brown sugar
  • 6 tablespoons unsalted butter cold and cubed
  • 1/2 teaspoon ground cinnamon

Optional Garnishes

  • Caramel sauce
  • Whipped cream

Instructions
 

  • Crust: Preheat oven to 350°F (175°C). Mix crust ingredients, press firmly into springform pan, and bake 10 minutes. Let cool.
  • Filling: Beat cream cheese until smooth. Add sugar and vanilla. Mix in eggs one at a time, then fold in sour cream and cinnamon. Pour onto crust.
  • Apples & Crumble: Cook apples with sugar, cinnamon, and lemon juice until slightly softened. Spread over filling. Mix crumble ingredients until coarse crumbs form and sprinkle evenly on top.
  • Bake & Cool: Lower oven to 325°F (160°C). Bake 60 to 70 minutes until edges are set but the center jiggles slightly. Cool in the oven with the door cracked for 1 hour. Refrigerate for 6 hours or overnight before serving.
