Ingredients
  

  • 1 cup cottage cheese
  • 2 large eggs
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon or herbs optional, for flavor

Instructions
 

  • Preheat oven to 350°F (175°C). Line a loaf pan with parchment paper.
  • Blend oats in a food processor until they resemble flour.
  • Add cottage cheese, eggs, baking powder, and salt. Blend into a thick batter.
  • Pour batter into the prepared pan and smooth the top.
  • Bake 35–40 minutes until golden and set.
  • Let cool completely before slicing for a softer texture.

Notes

  • For a rustic texture, leave oats slightly coarse instead of fully blending.
  • Add cinnamon for a sweet twist or herbs for a savory version.
  • This bread keeps well refrigerated for 3–5 days or can be frozen for up to 1 month.
