Ingredients
  

For the base

  • 2 1/4 teaspoons active dry yeast
  • 1 tablespoon honey or sugar
  • 1/2 cup warm water about 110°F

For the dough

  • 1 cup cottage cheese room temperature, mashed until smooth
  • 1 large egg beaten
  • 2 tablespoons unsalted butter melted
  • 1 teaspoon salt
  • 3 cups bread flour or 2 ¾ cups all-purpose flour, add more if dough feels too sticky

Optional flavor boosters

  • 1/2 teaspoon garlic powder for extra depth
  • 1 teaspoon dried Italian herbs for aroma
  • 1/2 cup shredded cheddar or parmesan for a richer taste

Instructions
 

  • In a small bowl, combine yeast, honey, and warm water. Stir and let sit 5–10 minutes until foamy.
  • In a large bowl, whisk cottage cheese, egg, butter, and salt until smooth.
  • Pour yeast mixture into the bowl. Gradually add flour until a soft dough forms.
  • Knead by hand 8–10 minutes (or with mixer 6 minutes) until smooth and elastic.
  • Place dough in greased bowl, cover, and let rise 60–90 minutes until doubled.
  • Punch down dough, shape into loaf, and place in greased 9x5-inch pan. Let rise 30–45 minutes.
  • Preheat oven to 375°F (190°C). Bake 30–35 minutes until golden brown and hollow-sounding.
  • Cool 10 minutes in pan, then transfer to wire rack to cool completely before slicing.

Notes

  • For extra flavor, add garlic powder, herbs, or shredded cheese.
  • Brush baked loaf with melted butter for a soft crust.
  • Store at room temperature for 2 days, refrigerate up to 5 days, or freeze for 1 month.
